Mom's Hamburger Stroganoff

This is a recipe I got from my Mom back when I was in college. I've kept the hand written recipe she gave me all these years. It finally occurred to me that it should be shared. It's delicious, a little bit decadent and easy to make.

1 lb. Ground beef
1 Medium onion
6 Strips of bacon
1 8 oz. Container of sour cream
1 Packet of onion soup mix
Egg noodles

Large skillet w/lid
Sharp knife

  • Chop the onion and bacon
  • In a large skillet, brown the ground beef with the onion and bacon
  • Drain the excess liquid from the skillet
  • Stir in the contents of the packet of onion soup mix
  • Cover and simmer for 15 to 20 minutes
  • Cook the egg noodles according to package directions
  • Just before serving, stir in the sour cream into the beef mixture
  • Heat through, but do not allow to boil
  • Serve over egg noodles
Notes: (1) I usually don't use the soup mix. When I looked at the ingredients they all seemed to have trans fats. (2) While I haven't tried this, yet, I'd like to try cooking the bacon ahead of time to get it nice and crispy and then adding it toward the end (maybe at the same time as the sour cream). (3) There was a sale on sausage this week at my local grocery store. I'm going to give that a try in place of the bacon. I'll update on that soon.
