Homemade Eggnog

This is a  healthier version than what you'll find at the grocery store. Some eggnog recipes use raw eggs which, understandably, makes people a little nervous. No worries here! You'll be cooking the eggs in this recipe. So, you can relax and enjoy!


Ingredients
4 egg yolks
3 cu. almond milk or coconut milk
1/4 real maple syrup
2 tsp. vanilla extract
1 tsp. nutmeg
1 tsp. cinnamon

Instructions
  • Whisk egg yolks in a small bowl and set aside
  • Combine milk, maple syrup, vanilla, nutmeg and cinnamon in a medium saucepan
  • Bring to a simmer over medium heat
  • Reduce heat to low
  • Add the hot liquid to the egg yolks a little at a time, whisking continuously, until you've added about 1 cup of the hot mixture to the yolks. Then  pour the egg mixture back into the saucepan
  • Increase heat to medium and whisk while simmering for 4-5 min
  • Remove from heat
  • Serve immediately or pour into a covered container and refrigerate for at least an hour before serving
NOTE: For an adult version add your favorite rum, whiskey or brandy.
