Slow Cooker Lasagne

I have a fabulous recipe for a traditional lasagne that I make very rarely because it's so much work! This is a super simple way to make a very tasty lasagne style dish. While this may not replace your traditional pan lasagne it should keep you tied over until you find the time to make the real thing.

Ingredients
1 lb. Ground beef
6 Whole wheat lasagne noodles
1 Jar (24 oz.) Spaghetti sauce
1 1/2 cu. Cottage cheese
1 1/2 cu. Shredded mozzarella

Equipment
Slow cooker, at least 3 1/2 quarts
Skillet

Instructions
  • Brown ground beef in the skillet and drain
  • Spoon 1 cu. of the spaghetti sauce into the bottom of the slow cooker
  • Mix remaining spaghetti sauce with beef
  • Place 2 uncooked lasagne noodles on top of sauce in crock pot
  • Spread 1/3 meat mixture on top of noodles
  • Spread 3/4 cu. cottage cheese over meat
  • Sprinkle 1/2 cu. mozzarella over cottage cheese
  • Add another layer of 2 uncooked noodles, 1/3 meat mixture, remaining cottage cheese (3/4 cu), and 1/2 cu mozzarella
  • Add a final layer of 2 uncooked noodles, remaining meat mixture, and 1/2 cu mozzarella
  • Cook on low for 4 hours

Serve and enjoy immediately or store in the fridge and enjoy all week!
