Baked Chicken Thighs

As I was looking for a quick reference online for baking chicken thighs I found several different recipes, each telling me different oven temperatures and cooking times. I considered all the recommendations and came up with my own formula. This is Seriously Simple Cooking. So, I made it simple... 400 degrees for 40 minutes. It's easy to remember and it works great.

This recipe is for bone in, skin on, chicken thighs. If you're cooking boneless and/or skinless thighs this will probably work just fine, but as always, make sure to check the internal temp. to be sure they're cooked sufficiently.

Ingredients:
Chicken thighs
Spices (Suggestions: basil & oregano; Cajun spice; salt & pepper; curry powder)

Equipment:
Baking dish: Use whatever size you need to fit the number of thighs you want to cook. I have found that 6 to 8 fit nicely in a 9"x14" baking dish.
Meat thermometer

Instructions:
Preheat oven to 400 deg.
Place thighs in baking dish in a single layer. It's OK if there's a little overlap.
Sprinkle liberally with the spices of your choice
Bake in the preheated oven for 40 minutes

Again, remember to use your meat thermometer to check the temperature to make sure the chicken is done (at least 165 deg.).
