Sweet Potato and Avocado

This is a delicious combination that I discovered a few months ago. The avocado gives it a decadent quality with it's smooth creamy texture and mild flavor. This combination is loaded with vitamins and healthy fats.

1 Sweet potato
1/4 Avocado

Microwave safe container/dish and cover
Sharp knife

Rinse the sweet potato and place in a microwave safe bowl or other container. Cover with a splatter guard designed for use with microwave ovens or other microwave safe cover. Cook on high for 3 minutes. Go longer for a large potato (maybe 4 minutes), a little less for a small one (maybe 2:30). While the potato is cooking, slice the avocado to get a one quarter wedge. Split the wedge in half length wise. Use the knife to separate the skin from the flesh. Place the avocado on a plate. When the potato is done cooking, carefully remove it from the microwave and set it on the plate with the avocado. Give the potato a few minutes to cool before eating. The best way to enjoy this is to have some sweet potato and avocado in each bite.
